What's for dinner?

Yum yum burritos. Shrimp, corn and avocado in whole wheat tortillas. 

Super easy and super tasty

Shrimp, corn and avocado Burritos


shell on frozen shrimp 1 lb
12 oz bag frozen corn
avocado, sliced
a lime
fresh cilantro, chopped
cheddar cheese, grated
sour cream (I used light)
pico de gallo or jar salsa
Package of large burrito size whole wheat flour tortillas

Steam shrimp in small amount of water with 1/2 juice of the lime
Steam frozen corn
Lightly brown tortilla but still keep it soft enough to roll
flip tortilla to other side and add cheese to melt
Remove tortilla from pan and fill with shrimp cut in big pieces, corn, avocado, cilantro, salsa, sour cream. Sprinkle with lime juice.

I like to cut in half so that the burrito can be picked up
