My version of Moroccan Chicken

My version of Moroccan Chicken

An amazingly delicious dish that is super simple to whip up. I have also used shrimp instead of chicken and it came out really delish.


My version of Moroccan Chicken

My Version Ingredients

Serves 3-4
    1 tbsp Olive oil

  • 2 chicken breasts or 1 lb chicken tenders
  • about 1 cup each of zucchini and yellow squash
  • 1 clove Garlic chopped
  • 1/2 onion
    • 1 cup Green olives, pitted
    • 1/4-1/2 cup raisins

  • Spices

    • 1/4 tsp Black pepper, fresh
    • 3/4 tsp nutmeg
    • 1 tsp cinnamon
    • 1 tsp Salt
    • 1 3/4 tsp Turmeric
    • 1/4 tsp Cumin
    • 1/2 tsp curry

Drizzle olive oil in bottom of casserole dish. Add sliced onions, raisins, squashes, olives, garlic, some slices of lemon. Then put chicken on top withe all of the spices, the rest of the lemon slices, and the butter. Bake for about 40 minutes at 400 with foil loosely placed over dish. about half way through you can still it around to mix the flavors but you don't have to. 

I like to serve it with some kind of cous cous like Near East brand cous cous with pine nuts. 
This casserole is so flavorful and simple to prepare. It is a sure winner.
I have also made it with shrimp instead of chicken and it was delicious.

Just some thoughts

One year ago at this time I don't know who I am or where I was. But I must have been in a nightmarish hallucinogenic nether land between neither living nor dead. And here I am at least for awhile. I said why? and someone else said why not?

DIY Parisian Bulletin Board - So Shabby Chic!

Using an old bulletin board or frame with a backing, paint it white with acrylic paints (I used the craft paints in a bottle). Let dry and then wipe on a black , watered down, and then wipe it off to give it a more antiqued look.

Rambling On In March

March is here and it came in with a wimper. Breezy spring weather with sunshine (or rain!) and spring birds singing all day and frogs peeping all night. Planted seeds that have begun sprouting and for some reason have been gathering moss and pieces of this and that for terrariums. One and a half being finished. 


My little friend came over and made a leprechaun bottle of gold necklace and then a leprechaun trap.

I have been busy participating in Treasury Blitzes on Etsy with a team that I belong to "TeamKitsch." This is one of my many Treasuries that I have created. The rules are to include one item from each participating member of the team and then select other shops from searching what ever my topic is for 16 pictures for that particular treasury. Making and Doing

I have had lots of energy and have been on the road to recovery. Ever since the weather turned cold and we finally had snow, I have been outside every day and I have been walking myself, walking Kilala and hauling sleds full of wood for the wood stove. There just isn't enough hours in the day to get all the things done that I want to. My head is just spinning from all the projects I am doing: artwork, decorating, organizing my house from being in the hospital and away for a year, and new ideas to do every day. Things to cook and bake-where's my Mom when I need her to tell me her recipes?
